"Unlimited" plans are truly a myth, indeed. I would also like to ad don't worry too much about what the big hosts are offering because there is no chance you or I can compete with them in that way. You should look more at what some of the smaller hosts are offering because you will have more chance competing with them.
You need to add value in different ways. There are still a lot of people who would rather go for a smaller host for better 1 on 1 support (In many cases it can be). Also a lot of people would rather know their limits as far as disk space and bandwidth go. You also need to try and find a unique selling point (More the better) that no other host has got. Also try and find a niche in the web hosting market. For example web hosting for a particular sport or country. Do you really like online stores or blogging? You can offer plans targeted for bloggers or people creating an online store etc.
Also something I have learnt is SEO is almost pointless in this industry because there is so much competition. Unless you target long tail keywords such as "professional UK cPanel hosting". If you would like to get traffic from the search engines adding a blog to your hosting site giving tutorials, articles etc is a great way to do it.
Are you really good at graphic design, web design or SEO? If so offer them as well. If you design a website for someone they are likely to use your web hosting because you know their site inside out.
