Default Domain in SBI

This is obviously a newbie question, but if I register my domain name with SBI and then later decide not to renew SBI, does the domain name belong to me? And would there be any problem with putting that same website up by myself if I didn't renew SBI? Hope that makes sense.

Yes, when you buy SBI! and register the domain it belongs to you. I actually bought SBI! in 2003 and failed because I didn't follow the guide so when I cancelled my account I had the domain transferred to another host. No problem at all.
