To the best of my knowledge that's not so. The best advice is to create alot of useful content for your visitors. If you are delivering quality content I'm sure no matter the amount of pages Google will ensure they pay you a visit and spider your site.

I find that hard to believe. Many websites have more than 200 pages and are indexed better than those with less. Dynamic websites can accumulate 200 pages in a matter of nothing because each profile and each user generated content pages adds in.
The way that this may be seen as true is if spiders have trouble going deep into a website beacuse they are not provided with a sitemap. If a spider can not follow your links, or overlooks some, a large portion of your site may not be indexed. Sitemaps help large sites ensure that they are indexed adequately.

I would find it very difficult to believe, we have some sites with tens of thousand pages thousands of which are indexed by Google.

It is simply something I learned from Site Build It. Those of you who has Site Build It will know in the tutorial it was mentioned somewhere that it gets difficult to rank high for the keywords pass 200+ pages.
I am glad however, that your shared experiences indicate that this is not so.
