Default Differences between hosts?

All hosts offer different services. The important thing is to plan a little first to determine what you might need.

Some charge for each domain, some (like mine, Dreamhost) let you have as many as you want. There is a wide variety of programs you may want to use. I made sure I could use php and mysql for example.

Try to determine what you may need. Think a little ahead, too. Plan for some growth. It isn't all that easy to more (I learned from experience, unfortunately). You will have to look at each host to see what they support.

Also, check out a few sources to see how reliable a prospective host is. This is difficult because there are a lot of unreliable critics out there badmouthing even some of the best.

Good success.
