If you are not going to use borders or a different background behind the table, the height should not matter. As you add content, the table will automatically adjust itself vertically.
Another issue you may run into is the table width as a percentage. A good design rule of thumb is to design for a width of 800 pixels since studies have shown that most monitors are set to 800x600 resolution. So, if all of your content can fit into 800x600 px table, just set the table to those parameters and you should be fine. You can even center the table itself.
