Are you sure it's hibernating and not just going on Stand-by? Turn off the Stand-by features also, which you can also do from "Power Options".

So, if you want your computer to be ON all the time, then turn off both hibernation and Standby.

In my experience, Windows can by funny about that... i.e. even though you tell it not to hibernate, it still does, or if you tell it not to turn the monitor off, sometimes it still does... so let me know if you are still having problems with this.
